Being a Memory Maker as a Food & Beverage Cost Controller

In this role, you will become part of the Edwardian family and work within Central F & B Control in The May Fair

To control and reconcile food and beverage costs in accordance with Radisson Blu Edwardian standards through analysis, requisitions, controls, margins and sales targets

Key Requirements


  • Three years%26rsquo%3B food and beverage unit management, and accounting experience in the hotel or service sector.
  • A record of demonstrable personal achievement with proven management skills.
  • Excellent communication skills (verbal %26 written) and ability to liaise effectively with non-financial staff.
  • Team player with outstanding inter-personal, negotiation and organizational skills.
  • Client focused approach to work.
  • IT literate
  • Creates 100% guest satisfaction by providing the comapny experience through performance that demonstrates the standards of, genuine hospitality and exceeding guest expectations
  • Provides Yes I Can%21 genuine hospitality and teamwork on an ongoing basis
  • Participate in the development of food and beverage financial goals for food and beverage operations and ensure they are aligned with the objectives of the hotel.
  • Ensure food and beverage invoices, delivery notes and requisitions are in compliance with Radisson Blu Edwardian procedures.
  • Support the Group Food and Beverage Controller in maintaining revenues by developing and updating menu pricing.
  • Assist in developing relevant budgets and forecasts.
  • Ensure provision of financial information for management reporting for the food and beverage operational team.
  • Ensure accurate and timely posting of sales in the appropriate ledgers.
  • Generate 100% guest satisfaction by exceeding guest and colleague expectations.
  • Ensure integrity of systems information.
  • Reconciling Micros %26 Opera revenue
  • Management allowances verification %26 reconciliation
  • Daily spot check of stocks in the outlets
  • Analyzing F %26 B Cost of sales - to maintain budget standards
  • Analysis of daily orders to review purchasing against business requirements
  • Complete inventory management including month end stock takes and no stock-out situations
  • Handling micros operational issues - reporting these to Micros and Group F %26 B controller
  • Stores management - ensure the items are stored and rotated properly
  • Verification of all F %26 B related allowances including minibar allowances
  • Verifying Micros control report on a daily basis and taking necessary actions accordingly
  • Preparing month end sales mix and related cost of sales analysis
  • Sample verification of minibar consumptions in 5 bed rooms
  • Performs other duties required to provide the service brand behavior and genuine hospitality
