Being a Memory Maker as a Food and Beverage Chief Steward
In this role, you will become part of the Edwardian family and work within Food and Beverage in Radisson Blu Edwardian Bloomsbury Street
The job of a Chief Steward is very important to the smooth running of the kitchen and back of house operation. A Chief Steward is the person who takes control of all cleaning and storage requirements, maintains a clean, sanitary kitchen and ensures all orders are put away and distributed correctly. A steward should be smart, enthusiastic, professional and polite at all times.
Duties and Responsibilities
Implementing and maintaining of food safety manuals procedure and SOPs
Distribution and communication of all collateral for back of house procedures in food and beverage areas
BOH training and induction plan for all BOH employees.
Administer training feedback to measure training effectiveness with Head Chef or BOH Manager
Co-ordinate incoming deliveries ensure that they are stored away correctly.
Carry out and record daily / weekly check list and pass onto head chef or supervisor to sign and file
Follow up with corrective action on all negative points on the health and safety audits
Identification of training needs and requirements in F and B back of house
Assist the head chef with 3, 6 month and annual appraisals of the stewarding team
File and update of all F and B basic standards documents/SOPs
Build strong relationships between front of house and Back of house teams
Periodic audits of each area to ensure they are at a satisfactory standard in back of house areas
Ensure the cleanliness of the BOH areas are maintained
Report any damage equipment or breakages to the head chef
Report any pest sightings or evidence to the head chef
Maintain par stock levels for crockery, cutlery and glassware for F and B outlets
Liaise with head chef regarding supplier issues for new or existing products needed for operations
Participates in the day-to-day running of all BOH operational aspects of the F and B department
To maintain food health and hygiene standards
To perform other duties as required in the F and B Team
Performs other duties required to provide the service brand behavior and genuine hospitality
