Being a Memory Maker as a Head Bar Tender

In this role, you will become part of the Edwardian family and work within Food and Beverage in The May Fair

Has 5* luxury food and beverage experience.

Communicates effectively and respectfully to guests on all levels.

Communicates effectively and respectfully to all members of staff.

Multi task and prioritise your work.

Explain the dining concept effectively.

Read tables and understand guests needs.

Take orders correctly and communicate them to the relevant sections.

Have full knowledge of the food menu.

Have full knowledge of the bar and wine products.

To meet and greet guest in a way that makes them feel special

To ensure company procedures and standards are maintained to ensure consistent delivery of service

Ensures all beverages are presented and issued to guests in accordance with the official service standard guidelines.

Ensures specifications of cocktails are adhered to at all times.

Ensures any discrepancies such as spillages and breakages are reported and recorded on the report sheets during the shift.

Has a disciplined approach when preparing mise en place of batched juices, syrups, infusions.

Local area knowledge, including local competition in the market segment

To serve F%26B customers in a way that makes them feel special

To check and maintain reservations for the restaurant including corresponding and follow up on all reservations and enquiries for the restaurant and bar

Works closely with the Head Waiters, Front of House Managers, Restaurant %26 Bar Manager and Head Barman to achieve success indicators and perform effectively in areas of responsibility

Gives personal attention, takes personal responsibility and uses teamwork to provide excellent guest service.

Assumes responsibility to gather information about each guest in order to update client database, and uses details to ensure a truly personal service.

To deliver service standards in accordance with the Brand Service Bible.

To adhere to the brand grooming standards in accordance with the official Brand Guideline Bible and to remain within such standards for the entirety of a working shift.

Takes orders and serves food and beverage to guest in accordance with company standards.

Clears tables, cleans food and beverage areas, and prepares equipment and mise en place on an ongoing basis.

Handles cash payments and float in accordance with company standards.

Assumes responsibility to keep up-to-date with food and beverage products and to find out about daily specials and new menu additions.

Keeps up to date with health and safety regulations, and adheres to emergency procedures.

Ensure all products are served according to company standards

Ensure the bar areas are maintained in a clean and orderly manner at all times.

Ensure that pre-service requisites are met and that the Bar Opening Procedure Checklist is completed.

Keep track of wines, beers, liquors, and other supplies.

Maintaining the product quality, by checking beer pipes, cordials, juices etc.

Follow the correct opening and closing procedures.

Follow the correct bar operating procedures with regards to:

Stock rotation (FIFO)

Requisitions (according to business

Maintaining par stocks

Conduct weekly training sessions with all bar tenders as well as regular training on wine and cocktails with other key members of staff

Achieve total guest satisfaction and organizational profitability through effective utilization of all resources.

Assist the Bar Manager in creating trend setting and innovative products and services, which contribute to sales activities and assist in maximizing revenue

Prepare Store requisitions and Bar requisitions

Works alongside the Front of House Managers, Restaurant and Bar Manager and Maitre D to ensure that a cohesive and well-structured rota is issued each week with effective cost control on payroll.

You may have noticed in the above descriptions that the word PRIMARILY has been underlined. This is because the responsibility you have been given means that this is your priority, however, it is not the only duty you are expected to perform throughout the evening.

Is able to use IT applications

Is able to achieve a 100% pass mark in Micros competency tests

Food and beverage product

Excellent local area awareness

Good command of the English language

Confident ability to communicate and establish rapport

Has knowledge of technical service skills

Sales skills

Ability to use relevant e-mail and word programmes

 

Throughout the evening you must also be checking the following: -

We can never anticipate every scenario in the restaurant and the above descriptions are a guideline of what is expected of you. You may be requested to perform other duties as required by the Restaurant and Bar Manager.

 

The next step on the ladder would be Front of House Manager. Before taking staff from outside, we will always endeavour to promote staff internally. We look for a positive attitude, enthusiasm and skill from a staff member in order to promote them.
