Being a Memory Maker as a Head Chef

In this role, you will become part of the Edwardian family and work within Food Production in The May Fair


Duties and Responsibilities

  • Takes overall responsibility for guest and staff satisfaction in Food outlets, by managing the daily operation of the kitchen and overseeing food preparation to ensure the highest quality of product within cost constraints
  • Ensures adherence to Edwardian Hotels London standards of food quality, recipes and preparation, by conducting inspections to maintain product consistency
  • Seeks out sources for fresh food and monitors all produce and meat for freshness%3B supervises storage of food to maximise quality and minimise waste
  • Suggests daily specials that incorporate seasonal or special order ingredients
  • Seeks opportunities to improve the guest experience by seeking feedback, and evaluating quality, and developing strategies to improve areas of concern
  • Co-ordinates the inventory, purchasing and disbursement of all supplies with the Food and beverage controller
  • Ensures all employees adhere to company health, hygiene, safety and emergency procedures, and that proper sanitation practices are followed
  • Selects, trains, develops, recognises, coaches, evaluates and manages the performance of all staff in the kitchen team
  • Provides employees with the orientation and training needed to understand expectations and perform job responsibilities
  • Communicates performance expectations and provide employees with ongoing feedback
  • Provides employees with coaching and counseling as needed to achieve performance objectives and reach their fullest potential
  • Evaluates employees performance, and conducts regular appraisals and feedback sessions
  • Leads by example, and motivates service excellence employees
  • Communicates and reinforces the company vision to all employees
  • Provides employees with the tools necessary to perform job responsibilities
  • Gives personal attention, takes personal responsibility and uses teamwork to provide excellent food service
  • Assumes responsibility to gather information about each guest in order to update client database, and uses details to ensure a truly personal service
  • Co-ordinates service with restaurant and banqueting operations
  • Controls costs, in order to maintain positive cash flow to maximise profitability
  • Develops annual budget recommendations and implements the approved budget
  • Monitors and controls equipment, staffing F and B sales costs on a daily basis, taking corrective action where necessary
  • Determines appropriate staffing levels, to maintain a balance between customer demands, profitability and employee preferences
  • Analyses business results on a regular basis and takes actions to improve results as appropriate
  • Participates in the development of business strategies for food and beverage which are aligned with the overall objectives of the hotel, and with developments in the local marketplace
  • Develops and implements business strategies for food and beverage departments
  • Analyses sales and competition on a regular basis and develops strategies to increase market share
  • Develops and implements menu offerings and pricing based on competition, market trends, costs, etc.
  • Keeps current on hotel policies and outside influences that may affect industry performance

Key Requirements

  • Have a high level of Food product knowledge, and an understanding of menu planning, content and pricing guidelines
  • Understands the strategic positioning of the hotel and company within the competitive market
  • Good command of the English language
  • Has knowledge of Edwardian Hotels London systems and procedures
  • Is skilled in budget management
  • Food Hygiene certificates
  • Has the ability to demonstrate personal ownership of tasks and follow through to get the required results
  • Skilled in the use of techniques and strategies required to deliver training material in-group and in one-on-one settings
  • Skilled in the use of Micros Management, Micro soft Word, Microsoft Excel, Microsoft Power Point, E-mail, Internet, food ordering systems
  • Skill in developing and adhering to department budget
